Orval, a Trappiste brewed to 6.2% ABV, 40 IBU, 14 EBC. It is brewed by Abbaye Notre-Dame d’Orval in Luxembourg province, Belgium. Side by side, it shows hazy amber with persistent beige head; the aroma leads with wood, caramel, wild yeast, floral hops; the palate is pronounced bitterness with woody, slightly tart notes; the finish runs long, dry and slightly wild. Its 14 EBC puts it in the deep gold range, and 40 IBU translates to pronounced bitterness. It is best served at 10–12°C in an Orval glass and commonly sold in 33cl. Table-wise, it works with Washed-rind cheeses, Artisan charcuterie, Mushroom dishes and Pâtés.
